I love all kinds of ethnic food, but I would probably say that Asian food is my favorite! (Well, Italian might be first with Asian a very close second.)
Tonight I made Edamame Fried Rice for dinner. As usual, the ingredients:
- 2 medium eggs
- 2 Tbsp. coconut oil
- 1/2 medium onion, chopped (I left this out)
- 2 medium carrots, chopped
- 3/4 cup edamame
- 1 tsp. fish sauce (or vegetarian fish sauce)
- 1 Tbsp. soy sauce
- 1/2 tsp. ginger, grated if using fresh
- 1 1/3 cups brown rice
You are going to want to cook the rice the night before and store it in the refrigerator. When you’re ready to make the Edamame Fried Rice, you will first scramble the eggs and set them aside.
After that, heat the coconut oil in a medium skillet over medium-high heat. Add the carrots (and onions if you want them) and cook for about five minutes.
Next you will add the edamame, fish sauce, soy sauce, ginger, and brown rice. Cook it for five more minutes.
Finally, you will add the scrambled eggs and cook for one to two more minutes.
Now it’s time to eat!
I added a little sriracha to mine to give it a little kick. It’s tasty and a great substitute if you’re craving some Asian food!
